The importance of Choosing the Right Butcher:
Choosing who butchers our pasture-raised Berkshire pigs is one of the most important decisions we make at Hickory Faith Farm. Our customers trust us to provide a rich, flavorful pork that is unlike anything you can buy at a grocery store. We raise our Berkshire pigs on pasture and feed them non-GMO grain as a supplement to native forage. That is the first step to great pork, but the final quality depends heavily on the butcher’s workmanship. We fully trust Pleasant Valley Meats Hog processing with our pigs.
Pleasant Valley Meats follows our precise cutting instructions and provides consistent, high-quality processing tailored to each individual customer. Pleasant Valley cut sheet includes a wide range of choices—classic roasts, chops, flavor-packed sausages, cured items, and specialty cuts. With a whole or half hog order, you can select exactly which cuts you prefer.
When it’s time to pick up your meat, Pleasant Valley vacuum-seals and labels each package. Vacuum sealing locks in freshness and allows the meat to stay in peak condition for long freezer storage. When you’re ready to cook, it tastes as fresh as the day it was processed.
Complete process of Pleasant Valley Meats Hog processing:
Below is the complete process of how Pleasant Valley Meats carefully breaks down and processes a whole hog. Their team works efficiently, ensuring quick turnaround times and consistent quality. Each member handles a specific task—operating the band saw, trimming, grinding, and vacuum packaging—while the owner oversees the entire process to ensure accuracy and attention to detail.
Every cut of meat is trimmed cleanly, removing any bone dust from the saw so you receive ready-to-cook, high-quality cuts. Their bacon is cured and smoked to perfection and is, without a doubt, some of the best bacon I’ve ever eaten.
Watching the process in person was an awesome experience and provided full transparency for the customers who buy our hogs.
